Authentic Gujarati Dal
Authentic Gujarati Dal recipe which has balanced sweet and sour taste with great health benefit. It tastes best with steamed rice. It is one of the main course platter items for Gujaratis that is consumed on the everyday basis.
🧺 Ingredients
- (measuring 250 gms approx) Toor Daal1 cup
- To Taste Salt
- Red Chilly Powder1 tsp
- Turmeric Powder1/2 tsp
- Coriander Powder1 tsp
- Cumin Powder1/2 tsp
- Fenugreek Seeds1/2 tsp
- Mustard Seeds (For tempering)1/2 tsp
- Tamarind (Tamarind or lemon juice)1 tbsp
- 1 to 2 tbsp Lemon Juice (tamarind or lemon juice)
- Jaggery (Can add more for a sweeter taste)1 tbsp
- Hing (For tempering)1/4 tsp
- Oil (For tempering)2 tbsp
- Coriander Leaves (For Garnishing)1 tbsp
- 1 spring Curry Leaves (For tempering)
👨🍳 Method — step by step
Wash and soak toor dal (Yellow lentils) for 1 hour in lukeworm water. You can also soak overnight for faster cooking next day. If you are using Tamarind for the sour taste, soak it too at this step.
Drain the soaked water and add fresh water. Pressure Cook toor dal for upto 4-5 whistles.
Once the pressure cooker is cooled, blend the cooked dal with blender. Add water to adjust consistency of your choice. Usually Gujarati dal is not too thick and not too thin with a flowy consistency.
Add dry ingredients - Salt, turmeric powder, red chilly powder, coriander powder, cumin powder, fenugreek seeds, and jaggery. Mix well the dal and let it simmer
While the dal is simmering, prepare the tempering. Take oil in a tempering pan and let it heat. Add mustard seeds and wait till they start pooping. Add hing and curry leaves and immediately pour into the dal.
If you are adding tamarind to your dal, pour the tamarind water to the dal at this stage. If you are adding lemon juice, wait till the dal gets its flavours.
Let the dal simmer for about 25 minutes on slow gas.
To add lemon juice, close the stove and add the juice and cover the dal with a lid. This would give great aroma to your dal and also health benefits. Enjoy your dal with steamed rice.
