Traditional Boondi (Golden Pearls)
Traditional Boondi used widely as a PRASAD in different part of India.
🧺 Ingredients
- Gram Flour (Can use BESAN too)1 Cup
- Sugar1 Cup
- 2 TBSPN Oil (Un-Flavored)
- 4 - 5 Strains Kesar
- Water (For preparing Batter)3/4 Cup
- Water (For Sugar Syrup)1/2 Cup
- 1/2 Tspn Cardamom (Powdered)
- 1 Tspn Pistachio (For Garnishing)
- To Fry Oil
👨🍳 Method — step by step
In a mixing bowl, take gram flour / besan.
Keep Adding water gradually to make a smooth batter (Should be in running consistency).
In separate bowl mix sugar and water to make sugar syrup.
Prepare a syrup without any strings. After getting first boil, lower the flame and keep it for 2-3 minutes.
Add cardamom powder and saffron and mix gently.
Sugar Syrup is ready.
Heat oil in a frying pan till medium in temperature.
Take a perforated Spatula. Keep it on the heated oil.
Start pouring the batter on it and let the small drops start pouring in the hot oil.
Don't tap / move or shake the spatula during this.
Fry the pearls on a medium heat. Take them out on a paper napkin. Let it cool down for a while.
Repeat the same step till the batter lasts.
Transfer the fried pearls into the sugar syrup and close the lid. Let it be like this for 15-20 minutes.
Mix gently again and garnish it with chopped pistachio
BOONDI is ready to be served.
