"Ukadi che Modak" - (Bappa Special)
A very well-known Ganpati Fest Special and an authentic Maharashtrian Dessert - "UKADI CHE MODAK"
🧺 Ingredients
- Grated Coconut (take only white part)1 cup
- Jaggery (Grated)1/2 cup
- pinch Cardamom (powder)
- Rice Flour1 cup
- Water1 cup
- Pure Ghee2 tbsp
👨🍳 Method — step by step
Take 1 cup water in a pan. Add 1 tsp of pure Ghee into it and boil it till it gets bubbles.
To that add 1 cup of Rice Flour and mix it fast. Put the gas very slow while doing it. and then switch off the gas immediately in 1 minute if mixing it. Now cover it with lid for at least 5 minutes.
Now on the other side take a tsp of Ghee in another pan and heat it. Add grated coconut and grated jaggery in it. Add a pinch of cardamom (Elaychi) powder to it. Your puran (filling) for modak is ready. One can also add kesar or rava or khoya in it.
The rice atta is ready. Take it out and bind it properly to make a nice dough.
Now take a little portion from the dough and put it in modak shaped vati and spread it with thumb. Add some puran (filling) of coconut (which we made previously to fill) in modak vati. Cover it vith another thin piece of rice dough in bottom of it.
Take a Modak Patra or steamer. One has to put prepared modak on Turmeric Leaf. Turmeric leaf gives it the real authentic fragrance. One can also use Banana leaf instead of Turmeric Leaf. Steam all the modak for about 10 - 12 Minutes.
Serve it on turmeric leaf. Put some pure ghee on each modak like traditional maharatrian does.
And it is ready!!
