🧺 Ingredients

  • 5- 6 Nos. Potatoes (Roughly Chopped)
  • 200 Gms Green Peas (Fresh)
  • Onions (Finely Chopped)3 Nos
  • Tomatoes (Finely Chopped)3 No.
  • 150 Gms Cauliflower (Roughly Chopped)
  • Brinjal (Roughly Chopped)3 Nos
  • 100 Gms Cabbage (Roughly Chopped)
  • 100 Gms Bottle Gourd (Roughly Chopped)
  • 1 - 2 Nos. Lemon (Adjust it as per the taste)
  • 50 gms Butter
  • 3 Tbspn Oil
  • 1 Tbspn Green Chilly Paste
  • 1 Tbspn Garlic Paste
  • pinch Hing
  • 1 to 2 Tbspn Kashmiri red chilli powder
  • 1 tspn Turmeric Powder
  • To Taste Salt
  • 2 Tspn Cumin Seeds
  • 1/2 tspn Mustard Seeds
  • 1 Tbspn Pav Bhaji Masala
  • 1/2 tspn Garam Masala
  • To Garnish Coriander Leaves
  • Processed Cheese4 Nos
  • Bun (Laadi Pav)8 Nos.

👨‍🍳 Method — step by step

Pressure cook potatoes, green peas, cabbage, cauliflower, brinjal and bottle gourd. Add 1 Tspn Salt. Mix it.
Cook it for 4 to 5 Whistle.
Let it cool down.
Open the lid, drain all veggies and preserve the stock for later use.
Mesh all the veggies together. Keep it aside.

Heat Butter and Oil in a pan.
Add mustered and cumin seeds.
Let them crackle.
Add green chilly paste and garlic paste.

Add Asafoetida, red chilly powder and turmeric.
Add onions to it. Cook it till translucent.
Add finely chopped Tomatoes and cook it with little water till soft.
Mesh them into the pan with spatula.

Season it with Red Chilly Powder, Salt, Turmeric, pav bhaji masala and garam masala.

Mix it well and cook again for 2 minutes.

Add this mixture to the Veggie mesh mixture.
Mix it well.
On a medium flame, let it cook by adding veggie stoke as required.

Adjust the taste as required by adding spices.

At the last add Table spoon full of Lemon juice.

Mix it properly and the BHAJI is ready.

Cut the Bun (Laadi Pav) in to strips.

On a flat pan, heat butter. Roast these strips from both the sides till brown and crispy. ( You can bake this also as an alternative to prepare bread sticks).

In a fondue bowl, Blow a candle in the place which will keep the bhaji hot.

Serve hot bhaaji in the bowl. Add tspn of butter and garnish it with lots of grated processed cheese and fresh coriander leaves.

Serve it with freshly baked/roasted bun sticks.
