Aam Panna Mint Chili Sorbet
Sorbet is a frozen dessert with sugar water and different fruit pulp. It is an European word which is derived from Arabic word "Sharbat" which we use in hindi also which means a sweet fruit drink. Sorbet on the other hand is fruit pulp mixed with sugar water and then frozen and then churned and again frozen to get a melt in mouth texture. It is a western dessert.
Aam Panna as we all know a very much Indian flavourful drink in which raw mangoes are first boiled or roasted and then transformed into a very flavourful refreshing drink.
Today I thought of fusing these two...Our very Indian Aam panna with western sorbet. Believe me friends you will fall in love with this indo western fusion dish.
🧺 Ingredients
- 3 Green mangoes
- 120 gram Caster Sugar
- Water300 ml
- 1 tea spoon Cumin seed roasted
- 1 tea spoon Mint leaves freshly chooped
- Red chili powder1 pinch
- To taste Black Salt
- 1 tea spoon Zest of one lemon
👨🍳 Method — step by step
Put the green mangoes in a baking tray and roast them at 180C for 25-30 minutes until softened or alternatively pressure cook the mangoes for 3 whistles.
Cool them completely, peel them and discard the seeds.
Mix together the mango pulp, sugar, lime zest and cumin seeds.
Add the mint leaves and blend it in a blender jar.
Refrezerate for 4 hours.
Take out from freezer and blend again to remove the ice crystals.
Pour them in a air tight container and freeze until firm.
Serve with a drizzle of chili powder and mint leaf and enjoy endlessly.
